I always enjoy making fun treats for the family, especially for holidays and special occasions. Lucky shamrocks are one of the symbols of St. Patrick’s Day and it’s only fitting that I incorporate the lucky shamrock and it’s beautiful green colour into a fun treat.
St.Patrick’s Day is the perfect time to get in the mood for some green delights! Rice Krispies squares are a favourite in our house, and of course it’s super easy to make. I love that you can keep it simple, get creative and change out the flavours/colours so easily. These Lucky Shamrock Squares are well received by the kids! With a crispy, rice square bottom and a white chocolate topping with sprinkles, it’s sure to get everyone in the mood for St. Patrick’s Day!
These super easy and delicious Rice Krispies squares are perfect for any occasion and you can easily switch flavours and colours to suit your needs.
Rice Krispies Square Layer
1/4 cup margarine or butter
1 – 226g pkg. regular mashmallows
1/2 tsp. vanilla extract
6 cups Rice Krispies Cereal (or other rice crisp cereal)
Green food colouring
Melt margarine or butter over low heat in large sauce pan. Add marshmallows and stir until completely melted. Add vanilla and stir. Add desired amount of green food colouring. I used about 10 drops to keep it light, but you can definitely make it darker. Add cereal and stir until well mixed and coated.
Spread with a greased spatula in a 13 x 9″ pan and let cool.
White Chocolate Topping
1 – 250g pkg. white chocolate chips
green food colouring
(Optional: peppermint extract)
Melt white chocolate in intervals in the microwave, or over the stove in a heat resistant dish over a simmer pan of water. When completely melted and smooth (be sure not to burn!), add desired amount of food colouring. If you want, you can add peppermint extract. I didn’t for this particular recipe though.
Spread white chocolate layer evenly over Rice Krispies squares with a spatula. I found a cake spatula worked perfect.
Top with sprinkles, or other fun edible decorations!
