I can already hear the festive holiday music whistling through the November air as December comes into view. It’s no secret that my favourite time of year is almost here and I can’t wait to start decorating for the holidays. I love the festivities and cheer during the holidays and the way it naturally brings people together in a time of joy. I’m already getting a head start on my holiday baking and experimenting with new recipes to go alongside with my tried and true over the years.
Every year, like my mom, I like to create a platter of treats that offer a variety of different desserts for the family and guests to enjoy. Certain recipes I have been baking year after year, as they are a must-have tradition to have on the platter. Over the last couple of years though, I have been incorporating some new treats and it has been so much fun to mix ideas and ingredients together to create an entirely new treat.
I like easy recipes that don’t take a lot of time. Just because a recipe is easy, doesn’t mean it has to take away from the deliciousness and quality of it. It just means that you spend less time fussing over the oven, and more time with your family. Becel® has a fool-proof, no fail Anything Goes Cookie Dough recipe that I’m in love with! It’s the perfect base for any cookie and you can add whatever ingredients you want to it. It’s a great way to make it your own by adding your own spin on ingredients. This cookie dough is light, fluffy and sets really nice in the oven.
It only takes a few minutes to put together a great cookie recipe using this Anything Goes Cookie Dough and you’d never know that you’re using margarine instead of actual butter in the recipe, thanks to the buttery taste of Becel® Buttery Taste margarine. Just replace butter with margarine 1:1 in any recipe for a healthier change up. My family’s favourite combination is cranberries, white chocolate and coconut for a festive cookie for the holidays.
2 1/4 cups (550 mL) all-purpose flour
1 tsp. (5 mL) baking soda
1/2 tsp. (2 mL) salt
1 cup (250 mL) Becel® Buttery Taste margarine*
1 cup (250 mL) firmly packed light brown sugar
1/4 cup (60 mL) granulated sugar
2 large Naturegg™ Omega 3 eggs
1 tsp. (5 mL) vanilla extract
1/3 cup dried cranberries
1/3 – 1/2 cup shredded, sweetened coconut
1 cup Hersheys White Chocolate Chipits
- Preheat oven to 375°F (190° C). Combine flour, baking soda and salt in medium bowl; set aside.
- Beat Becel® Buttery Taste margarine with sugars in large bowl. Beat in eggs and vanilla until blended. Gradually add in flour mixture; beat just until blended.
- Add cranberries, coconut and white chocolate chips. Drop by tablespoonfuls on un-greased baking sheets, 2-inches (5 cm) apart.
- Bake 7 minutes or until edges are golden. Cool 2 minutes on wire rack; remove cookies from sheets and cool completely.
For an extra special touch, melt a little bit of white chocolate chips, along with a bit of sweetened condensed milk and drizzle lightly over the tops of each cookie.
