With the arrival of the 2016 New Year come resolutions. For many people, it’s a chance to focus on things they want to change or incorporate into their lives to better themselves. One of the most popular resolutions is healthier eating. I am always on the lookout for healthy recipes because I know the benefits of providing a healthy lifestyle for my family and have been enjoying many of the Ricardo Cuisine recipes lately.
This year, I am focusing on finding more healthy recipes to switch up our meals and encourage the family to eat more vegetables, grains and meats. We eat a lot of soup in our family (thanks to my mom’s fabulous soup-making skills!) and I wanted to find a soup recipe that I could whip up easily for the family (without needing my mom’s help) on cold, wintery days that would be filling and satisfying, as well as full of flavour.
Ricardo Cuisine conveniently has a Healthy Recipe section on their site that is full of amazing recipes that are well laid out to make each recipe easy to follow along and execute.
I found a delicious recipe on the site called Barley, Squash and Broccoli Soup that immediately caught my eye. I knew I had to try it out! It’s full of wonderful vegetables, chicken and barley that combine to make the ultimate soup to help warm you up and keep you on the right track with your New Year’s resolutions.
I made sure to print out the recipe before I got started and took my time to prepare my ingredients so that it would be easy to put the soup together without fuss. Surprisingly, the only time consuming part of this recipe is the prep work in getting the vegetables chopped, herbs cut and everything else prepped. The soup itself takes little effort and the ingredients combine for a beautiful, flavourful and hearty soup that is quite satisfying with lots of flavour.
I followed the recipe exactly as written, made sure to add my ingredients in the correct order and after that, all it took was simmering the soup and adding the acorn squash and broccoli in separately at different times near the end. Super easy, super delicious and I was quite proud of the end result because it was exactly as I was hoping for.
This is a clean and light-tasting soup that is filling and is great served with a bit of Parmesan grated on top and a crusty bread roll on the side.
